Sweet Tooth


Having a sweet tooth is especially troublesome if you are diabetic. Even if you have become accustomed to avoid sweets, the craving for something really sweet and yummy can suddenly come up. It doesn't happen very often for my own part, but I have diabetic friends who find it hard to resist.

There are even people who claim to be chronically sugar addicted, and sugar do in fact affect endorphins and dopamines in the brain, but one cannot become addicted in the sense that what one would call a regular abuse.

But what do you do as a diabetic when this huge craving strikes?

Well, you can always buy sugar-free sweets, chocolate or similar, but you can also fix something yourself if you always have some simple ingredients at home

It may not sound like much to the world, but sugar-free juice for example, like Fun Light, can do wonders to cottage cheese and turkish yogurt. Mix out the concentrate with any dairy product and there you have a creamy and fruity dessert which can be advantageously enjoyed with berries or nuts and is especially suitable as a snack when the sweet cravings is at its worst.

Banana ice cream is also easy to make and it's really delicious. This is how easy it is: Freeze a banana into slices. When you get a craving, run them in the mixer to the desired ice cream consistency. YUM!

By the way, did you know that you can make a lot of tasty stuff with chickpeas, also called aquafaba? Among other things, you can swing together a fluffy chocolate mousse, because the chickpea liquid can be whipped up to a hard foam just like you can do with egg white.
You can also mix the fluff with fresh or frozen raspberries and some honey, if you prefer.

Here's a recipe for a sugar-free, delicious chocolate mousse, a variant made from whipped chickpea liquid, mixed with melted chocolate and sweetened with stevia or xylitol, both of which are good sweeteners of natural origin. 


Ingredients

4 portions

• 1.5-2 dl chickpea liquid (from 1 jar or 1 pack)

• 100 g of dark chocolate sweetened with stevia or xylitol

• (possibly some honey or agave for those who want extra sweetness)

• topping: berries, fruits or chopped nuts


Whisk the chickpea liquid into a hard foam until it holds to turn the bowl upside down.

Melt the chocolate in a water bath and mix in the chickpea fluff.

Run for a while with the electric whisk to get a good mousse texture.

Pour into bowls or glasses - eat directly or place in the fridge and serve later. If you cool it for a while, the mousse becomes firmer and more chocolate pudding-like because the chocolate solidifies again. Serve with fresh berries or chopped nuts.
