As November is Diabetes Awareness Month and the 14th World Diabetes Day, I thought it would be a great idea to attention this with a couple of yummy diabetic-friendly desserts.

Pour the whiskey into a saucepan and simmer for 2-3 minutes.
Mix ricotta cheese, cocoa powder, nuts, oatmeal, raisins, cinnamon and sweetener in a bowl.
Pour the hot whiskey over the mixture and sprinkle over the gelatin. Mix all ingredients well and let stand while preparing the baking mold.
Lightly moisten a square baking sheet (or a mold). Store it in the freezer for ten minutes.
Pour the mixture into the mold and leave it in the freezer for at least three hours.
Slice in desired sizes before serving.
Coffee pudding
Desserts for diabetics don't get much better than this pudding made with coffee - a true culinary classic. It's not only good, but also very aromatic.Ingredients
- 4 egg yolks
- 8 egg whites
- 2 1/2 dl hot water
- 5 dl skimmed milk
- 100 g cornstarch
- 2 tablespoons instant coffee dissolved in 120 ml hot water
- 2 tablespoons of a sweetener suitable for diabetics

Walnut cakes
These good nut cakes are perfect for dessert or for afternoon coffee. They contain some whiskey, but it's entirely optional.Ingredients
- 6 chopped walnuts
- Cinnamon after taste
- 2 tablespoons of whiskey (optional)
- 250 g light or fat-free ricotta cheese
- 1 packet of non-flavoured gelatine (around 7 g)
- 1 tablespoon of raisins (black or yellow)
- 2 tablespoons oatmeal
- 1 tablespoon sweetener suitable for diabetics
- 1 tablespoon of cocoa powder without added sugar
