Bon Appétit - Get Hot & Spicy

Thought I'd share a couple of super easy and super yummy recipes. I really love chicken and I always try to find new recipes that's not too complicated and doesn't need too much ingredients, and since I love curry as well, this dish is a brand new favourite.

Chakchouka, an originally Tunisian egg dish popular in North Africa and the Middle East, is a very popular dish at the moment, and very yummy too. I eat it with my home made burgers instead of fries, much healthier.

Both dishes are diabetes friendly.

Coconut-Curry chicken


Ingredients
  • 600g skin- and bone-free chicken pieces
  • About 1.5 tablespoon curry powder or curry paste (red curry gives more of a Thai flavor; also delicious)
  • 1 can of coconut milk (400g)
  • The juice of half a lemon
  • Salt

Heat the oven to 175 degrees.
Put the chicken pieces in an oven form and rub them with salt and curry powder or curry paste
squeeze the lemon juice over the chicken
Stir the coconut milk to a smooth consistency and pour over the chicken.
Let cook in the owen for about 40 minutes.




Chakchouka

Ingredients
  • 4 diced tomatoes 
  • 2 red red peppers, in strips 
  • 1 sliced yellow onion 
  • 4 eggs 
  • 1 teaspoon of chili peppers (if you like hot food) 
  • Olive oil 
  • Salt and pepper

After the vegetables are chopped and roasted in the olive oil, make small holes in the sauce and crack an egg in each hole. The egg is then cooked in the sauce. It will be very beautiful in the pan with the deep red sauce and the sunny eggs; and it tastes very good. You may want to eat it as a main course with a delicious salad or it can be an accessory to some good burgers made on meat or beans.
